Why sc and not ss?

Because the ending is Latin -escentia, and the c is what makes the word a beginning rather than a state.

The -escere family in Latin means to start doing something: florescere is to come into flower, convalescere is to start getting well. English kept the whole ending, sc and all, then stopped pronouncing the c in front of an e. Infloressence writes the sound. Inflorescence writes the grammar.
