Why the final e?

Because without it the c would be hard. Inflorescenc would end in a k sound.

A silent e at the end of an English word does two jobs, and this is the second one: it holds a c or a g soft. The same e is at work on the end of science, absence and licence. Take it away and the last sound of the word changes.
