Where did the h go?

It never left. Perianth ends in th because the Greek is anthos, flower, written with a theta.

Written down at speed, an unvoiced th at the end of a word often comes out as a plain t. The same theta sits in anther and in anthesis, the period when a flower is open. Keep anthos in mind and the h stops looking optional.
